- 340 gramos calabaza, con cáscara y sin semillas
- 180 gramos carne, paleta, cortada chica a cuchillo
- 1 cebolla Blanca, en brunoise chica
- 1 cebolla de verdeo, en brunoise chica
- 1 diente ajo, bien picado
- Perejil 1 cucharada, picado muy fino
- Aceitunas, 1 cucharada, picada bien finas
- 2 tallos apio, blanco, picado en brunoise muy chica
- 2 cucharadas Pulpa de tomate,
- 1 pizca Comino
- Sal lo necesario
- Aceite vegetal lo necesario
- Morrón rojo encurtido, 2 en brunoise muy chica
- 1 puñado queso rallado
- 3 fetas queso emmental
- 1 feta panceta, flaca, picada en brunoise chica

- Preparamos todos los ingredientes, los cortamos como dijimos anteriormente.
- En una asadera, agregó aceite un chorrito en el fondo y acomodo la calabaza vaciada de semillas.
- El horno..., pongo el temporizador en 40 minutos, (es aproximadamente lo que lleva cocer la calabaza), quizás menos y cubro la calabaza con papel aluminio.
- En una sartén, con aceite caliente pongo a sofreír la carne y la panceta. Agregó sal, la pizca de comino y pimienta.
- Luego agregamos la cebolla y el morrón, dejamos que la 1era. Quede transparente.
- Cuando este paso está, agregamos la cebolla de verdeo, ajo y apio. Revolvemos bien.
- Lo dejamos 4 minutos y se agrega la pulpa de tomate, comprobamos los condimentos y dejamos sofreír. Después de 3 minutos ponemos las aceitunas, revolvemos y apagamos el fuego. Agregamos el queso rallado.
- Comprobamos con un tenedor si la calabaza está tierna, si es así retiramos y bajamos un poco el horno.
- Rellenamos las calabazas con una cuchara, le ponemos el verde picado fino de la cebolla de verdeo.
- Luego agregamos las fetas de queso emmental y llevamos al horno, para gratinar un poco.
- Cuando el queso está, retiramos, dejamos reposar 3 minutos.
- Servimos y buen provecho!!
