  1. Pelar, picar y colocar en una olla el zapallo. En mi caso era 1, 500kg de calabaza al pelarla me quedó 1, 200kg
  2. Llevar hasta que hierva junto con los dos litros de agua y el azúcar.
  3. Pasados los 15 minutos de hervor retirar y dejar reposar. Licuar todo reservando una taza de líquido colado.
  4. Colocar el licuado en la olla nuevamente, calentar.
    Disolver 2 cucharadas al ras de agar-agar con el agua de cocción del zapallo que habíamos reservado. Mezclar con nuestro licuado y seguir cocinando 10 minutos más.
  5. Colocar en caliente en el molde que vamos a dejar el dulce, afuera de la heladera y sin tapar para que no transpire.
  6. En mi caso le puse 2 cucharadas de agar-agar y quedó bien firme, tendria que probar con una sola para ver cómo queda.
    En vez de clavo de olor se le puede poner cáscara de naranja o vainilla, eso es a gusto.
