- Ya que las 4 calabacitas estƔn huecas se ponen a cocer al vapor durante 20 minutos a fuego medio.
- Mientras las calabacitas se cocinan, se prepara el relleno, en un sartĆ©n mediano se pone la cucharita de aceite a calentar, se pican finalmente los dos dientes de ajo medianos y la media cebolla, se ponen en el sartĆ©n a quĆ© se sofrĆan.
- Se pican los ramilletes de coliflor hasta quedar en porciones mÔs pequeñas y se agregan al sartén, se saltean por 5 minutos, se agregan las 4 cucharadas soperas de crema, se mezclan los ingredientes hasta quedar integrados, después se desmorona el 1/4 de queso fresco y se añade al guiso, por último se sazona con sal y pimienta negra al gusto.
- Ya que las calabacitas estĆ”n cocidas se dejan enfrĆan un poco y posteriormente se rellenan con la mezcla de coliflor que tenemos hecha y listo, ya tenemos nuestras calabacitas listas, se pueden acompaƱar con arroz, frijol o ensalada, en mi caso preferĆ acompaƱarlas con arroz blanco.
